An introduction to the wonderful world of beef charcuterie. This hands-on 2 full day workshop, includes all ingredients and lunch on both days. In this charcuterie workshop we will introduce you to the basics of the three main arts of meat curing – whole muscle dry curing and aging; brining whole cuts for hot smoking; and how to make 3 classic sausages, and the basics of making salami and droewors.
Techniques covered include:
Day 1 – whole muscle curing and brining to make, biltong, cured loin, bresoala, pastrami, and corned beef;
Day 2 – how to make a classic boerewors, breakfast beef sausage, beef droewors and salami.
