Sustainable Pork cooking workshops

Wickedfood Earth farm is primely a pig farm, with all our animals being veld-raised, and completely free-range. We use no routine antibiotics and growth hormones or stimulants. Our animals take, on average, twice as long to reach maturity as factory-farmed animals. We have become synonymous with whole roasted pig, supplying around 50 each year to Christmas dinner tables across the country. We are now offering a similar option to our corporate clients, but cooking it with us at the Cooking School. As a past happy client put it:

“…. What a feast, such fabulous REAL food is a rare treat! I admire and respect your ethics about sustainability, care for the environment, and most of all the kindness and true respect for your animals. Quite simply, one tastes the respect and happiness!! Thank you – a memorable feast. The pork was sublime…..

We have a selection or menu options that cater from 8 to 40 participants. This is an interactive food experience where you discover our soil-to-plate philosophy to food. First our resident chef takes you for a tour of the gardens, talking about growing and using different vegetables, sustainable farming, and food production of factory versus sustainable farming. Then after a mid-morning break to taste some of the unique sustainable products made on the farm, from a basket of the freshest seasonal produce, together we develop and cook a  6 dish banquet. Menus include:

  • Oven roasted whole pig – where we’ll walk the group through the whole cooking process from preparation, to roasting and carving, and enjoying the pork at the end of the workshop;
  • Roast Pig Chinese Style – roasted pig is a renowned traditional Chinese delicacy. The traditional way to serve it is first to slice off the crispy skin, together with some of the meat and serve together with plum sauce, spring onion and cucumber wrapped in thin pancakes. Next the remaining meat is cut up and served as a second course in a stir-fry, including noodles;
  • Pork mixed grill – we walk you through how to cook a selection of different pork cuts and seasonal vegetables on the braai.

Budget End-of-Year Functions for larger groups

We’re acutely aware of budget constraints that many companies are experiencing at the moment. We have looked very closely at costings and developed a selection of fun, pared-down menus, with less cooking time (3 Hours) then our regular menus (4 to 5 hours). Each menu offers different combinations to match the theme for the day, and is Halaal Friendly. These menus have been specially developed for groups from 15 to 60 participants, made up as follows:

StarterSoup or deep-fried finger snack;

MainBBQ chicken flatties – with a selection of flavour profiles, 1 piece of chicken per person;

Starch – to match the theme for the day, either potatoes, pap, or rice;

Vegetable – either as a sauce for the starch, a salad or stir-fry of seasonal vegetables grown on the farm or from local farmers.

DessertA baked pudding featuring the fruit grown on the farm, with farm-made yoghurt cream.

  • 14:00 – depart.

Full day programme

You are also welcome to hire the facilities to do a presentation, training, networking etc. after a cooking class (or prior to).
