Slow Wood Roasted Free-range Pork Banquet

In celebration of Wickedfood Earth Farm’s new Pig Breeding programme, Wickedfood Earth Country Cooking School will be hosting a unique banquet lunch. The highlight of the meal will be two wood roasted whole pigs. Over the last 2 years, we’ve been cross-breeding indigenous Kolbroek pigs with Duroc and European Boar in an effort to breed the perfect free-range pig for South African conditions. Now for the first time we will be spitbraaing one of these crossbreeds, together with a kolbroek to compare flavour.
Menu:
Starters – a selection of mezzes made from our own charcuterie, including farm made pâtés and terrines, salami and coppa, 2-year cured ham and hot smoked country ham, as well as farm-grown vegetable dips and pickles, and farm baked sourdough bread;
Main course – slow wood roasted whole pigs accompanied by a good selection of locally grown autumn vegetables including a tasting of our organically grown potatoes and squashes;
Dessert – Hearty baked fruit pudding, from the the past season’s preserved fruit with local clotted cream.
All the produce for this event will showcase the fantastic flavour of Wickedfood Earth Country Cooking School’s locally, organically grown fruit, farm made preserves and veld raised pork.

All those attending will also be eligible to order a special meat box, at reduced rates, representing a cross section of our product.
Background
Over the last 2 and a bit years we’ve been developing a crossbreed free-range pig. We’ve been cross-breeding the indigenous Kolbroek pig with Duroc and European Boar in an effort to breed the perfect free-range pig for South African conditions. We’ve also been experimenting with diet in an effort to bring the pig back from it’s dependence on manufactured feed, high in GMO cereals full of growth supplements, to a more balanced pasture based diet. As the pig is much slower to grow and gets to be out in large open fields, the meat takes on a completely different character, from pinky grey lean and tasteless, to dark red, well marbled and full of flavour.
Apart from cross-breeding, Wickedfood Earth Farm is also resurrecting a viable free-range Kolbroek and Windsnyer herd to preserve these two gene pools and supply breeding stock to other small-scale farmers.
Since 2012 we have bred over 500 pigs in a totally free-range system. The programme was temporarily halted in 2016, when we just went down to a small nucleus breeding group for our own consumption and for training. In 2020 we revived the programme with a focus of developing a crossbreed free-range pig as well as preserving the indigenous Kolbroek pig. Click here for more on our pig project.
