Well, spring is definitely here, with it all those delicious first spring vegetables and berries. At the moment we are harvesting baskets of mulberries, strawberries, artichokes and asparagus. Being so fresh, the best way of cooking both artichokes and asparagus is simply to steam them and enjoy with a mild home-made mayonnaise, lemon butter (in a pan melt 2T butter and whisk in 1t grated lemon peel and 1T lemon juice, add steamed asparagus, heat through and serve warm) or for a special occasion, a Hollandaise sauce – see recipe.
